
As you all know I’ve gone semi-Paleo…and I have a sweet tooth. This morning I woke up and was craving pancakes so I decided to try these healthy pancakes that I could actually eat. It sounded a little weird that it’s only eggs and a banana and seemed too boring to make a delicious pancake. But boy was I wrong! These are delicious! I made two but I ate the other one before I could take a picture of it! Its a must-try…
Anyway let me tell you how I make these amazing Paleo Pancakes:
Ingredients:
- 1 banana
- 2 eggs
- 3 tbsp. of milled flaxseed
- A drop of vanilla, and add cinnamon or honey if you’d like!
Start by mixing 2 eggs in a separate bowl. Then mash a banana with a fork until it becomes mush. Add the banana to the eggs and stir longer while adding in the flaxseed and cinnamon/honey/vanilla extract or whatever else you’d like. For lining your pan, you must invest in some coconut oil for cooking. Thats what I used. Then put the stove on medium heat and cook and flip when ready. Afterwards I just add a drizzle of honey and mixed frozen berries and VOILA! You have the perfect skinny pancakes. They are delicious! If I had some whey protein, I might have added that also, but with the banana and eggs its already enough!

Sounds delicious. My body doesn’t tolerate ground flax so well. Can you substitute the flax for something?

The original recipe that I saw doesn’t even require flaxseed! I just added it on my own…maybe you could do protein powder or try just without anything??
