
Hi yogis and fitness-lovers! I just had the most filling, delicious dinner. Ohhhh the happiness of Trader Joes being right down the street:) tonight I made organic chicken that I cooked with fresh garlic and white wine along with kale and mushrooms sautéed on top! And then I had it over a bed of arugula (my favorite!!).

I just want to mention that you don’t need to read recipes, or follow strict diets in order to enjoy a nice healthy meal! If you follow my Instagram at all, you will slowly notice a pattern of my main “happy” ingredients. I just find the protein of my choice, and cook it with my favorite vegetables or herbs. Everyone has at least ONE go-to vegetable! My go-to’s are arugula, kale, spinach, tomatoes, garlic, onions/chives, and basil…I could pair this with anything and be happy as a clam.

Find your go-to favorites and voila! You have a fantastic dinner to enjoy!
I didn’t use any salt, butter, or grains or dairy…this was all cooked with coconut oil and garlic, yet still delicious!

Thank you!!!! I think quick is very important too because we fall to our convenience foods so often with the excuses that healthy takes too much time or is too expensive:)
