Herrrroooo….
So I’ve been on a bit of a cooking craze lately:) I wanted to just try and take more pictures of meal ideas because I get a lot of emails from people about what to eat, how to eat clean, or how you can create something on-the-go and at the same time being somewhat healthy! My biggest advice is to prepare yourself. When I cook meats, I cook more than I need so that for the next day or two, I have a healthy go-to meal that can be made easily so I don’t have to run out and buy something.
Let’s start with this morning:
I was craving French toast but didn’t want to load up on carbs since having carbs first thing in the morning usually makes me sleepy throughout the day. So I had this! You will have to give it a try:
- Its just sliced apples
- Dip it in a regular French toast mix and add extra nutmeg and cinnamon.
- Then I topped it with some honey, pecans and more cinnamon!
- No syrup needed, its sweet enough and deliciously easy.
- I also had egg whites a few hours later just to make sure you know that’s not ALL I had for breakfast.

For Lunch, I just made this with last nights chicken!
I got a couple corn tortillas, topped it with the shredded chicken, diced up some grape tomatoes, and added the spinach and kale as well as some cheddar cheese. I put a lot of pepper on it and some light garlic powder. Turned out great and it only took about 8 minutes. I just stuck it in the toaster oven and then topped it off by broiling it.
More blog entries to come in time about meal ideas:) I’m on a mission to get my bod back! For good this time!!! But as most of you who read this know, things happen, LIFE gets hard, and sometimes we forget the most important person, which is ourselves. You need to take active action to stay healthy, it’s a gift that we have this life…don’t waste it by forgetting ourselves. I am on a mission to lose 10 pounds of fat…. its all in my thighs and bottom and once I start my AdvoCare challenge, I will have even more clean recipes! I’m also trying to get more fitness in! I already did a half hour of elliptical and a half hour of cycling earlier as well as a leg day in the weight lifting category. I have power yoga in a couple hours and I’m excited to get to the mat:) Stay healthy everyone!
